- Para nuestro cheesecake Acremamos el queso crema y poco a poco agregamos nuestra azúcar, posteriormente agregamos las piezas de huevo 1 a 1 y mezclamos de manera suave para que nuestra mantequilla no se corte


- Después de agregar las piezas de huevo agregaremos nuestra harina cernida, jugo de limón y vainilla, mezclamos bien y colocamos nuestra mezcla en un molde desmontable previamente cernido y horneamos a 180° por 1 hr y cuando esté listo lo refrigeramos por 2 hrs y desmoldamos



- Para nuestro bizcocho acremamos la mantequilla con la mitad de nuestra cantidad azúcar que nos marca hasta que quede de color claro, derretimos nuestro chocolate y cuando este tibio lo incorporamos a nuestra mantequilla y mezclamos



- Separamos las yemas de las claras y con las claras haremos un merengue francés, utilizando la otra mitad de el azúcar


- Agregamos las yemas 1 a 1 a nuestra mantequilla alternando la harina con el merengue, terminando con el merengue dejando una mezcla homogénea



- Vertemos nuestra mezcla en un molde previamente engrasado y enharinado y horneamos a 180° por 25 o 30 min


- Haremos una crema de chocolate, lo primero que haremos será derretir el chocolate posteriormente mezclamos nuestra crema para batir e incorporamos nuestro chocolate en forma de hilo hasta que se formen picos firmes y estará lista para agregarla a una manga pastelera



- Para nuestra ganache haremos el mismo procedimiento, mezclamos nuestra crema para batir con el chocolate tibio

- Haremos un jarabe colocando el agua en una olla con el azúcar sin mezclar y lo dejamos por 10 min a fuego medio después retiramos del fuego y agregamos café al gusto


- Cuando todo lo anterior esté listo comenzaremos a armar nuestro pastel, partimos nuestro bizcocho en 3 capas


- Montamos nuestra primer tapa de bizcocho y lo humedecemos con jarabe, posteriormente le colocamos una capa de crema de chocolate y nuestro cheesecake encima



- Le colocamos una capa de crema de chocolate encima del cheesecake y una última tapa de bizcocho, finalmente humedecemos nuestro bizcocho y emparejamos la crema para meterlo a refrigerar

- Lo sacamos del refrigerador y empezamos a colocar nuestra ganache de la forma que se muestra en la imagen y comenzamos a alisar


- Cuando este alisado solamente decoramos refrigeramos y estará listo
