  1. Haremos todo nuestra mise en place y posteriormente comenzaremos con el jarabe para que al utilizarlo esté frío. Pondremos a hervir el agua junto al azúcar, después integraremos el café y retiraremos del fuego.
  2. Comenzaremos con las soletas, separamos yemas y claras, haremos un merengue francés, cuando veamos pequeñas burbujas agregaremos la mitad del azúcar en forma de lluvia, también empezaremos a blanquear las yemas al verlas un poco más pálidas agregamos la otra mitad de el azúcar.
  3. Al tenerlos listos empezaremos a agregar la harina de poco en poco hasta terminarla y un poco del merengue, finalmente agregaremos el merengue.
  4. Formaremos las soletas y pondremos por encima azúcar glass, hornearemos por 20- 25 min a 180°.
  5. Para la paté a bombé, pondremos al fuego agua y azúcar, cuando el azúcar esté a punto de bola es decir algo manejable lo agregaremos a las yemas que anteriormente blaqueamos.
  6. Pondremos a hidratar la grenetina pondremos el triple de agua a la cantidad total de grenetina que usamos, pondremos a derretir y agregaremos a la paté a bombé, posteriormente esta mezcla la agregaremos al queso crema.
  7. Por otro lado batiremos la crema para batir a punto medio y agregaremos a la mezcla anterior aquí podemos agregaré un poco de jarabe de café.
  8. Ahora vamos a empezar a armar el tiramisú, teniendo la mise en place de jarabe de café, las soletas y el relleno, pondremos una base de soletas remojadas en el jarabe.
  9. Después pondremos encima el relleno y cocoa en polvo y así hasta terminar, teniendo en cuenta terminar con relleno y adornaremos con unas soletas alrededor.
