  1. Lo primero que haremos será nuestra base de galleta, con ayuda de una licuadora, licuamos nuestras galletas de poco en poco junto con las almendras molidas y una vez teniendo todas molidas le agregamos la mantequilla derretida, el azúcar y lo mezclamos perfectamente bien, con esta mezcla haremos nuestra base de galleta que colocaremos en nuestro molde desmontable desde la base hasta las paredes
  2. En una batidora acremamos perfectamente bien todo el queso crema para evitar grumos, incorporamos el azúcar y seguimos batiendo.
  3. Cuando este perfectamente acremado e integrada el azúcar agregamos lo huevos 1 por 1, recordando que se deben de abrir antes en un recipiente aparte para evitar huevos en mal estado. Cuando hayamos terminado de incorporar todos los huevos, agregamos la vainilla y el jugo de limón.
  4. El último paso será agregar la crema ácida, ya que todo este perfectamente incorporado agregamos la mezcla a nuestro recipiente con base de galleta
  5. Metemos hornear a baño María por aprox 1 hora y media o bien a fuego directo a 1 hora y 20 min procurando tener mucho cuidado de que no se queme. A 150° dependiendo de la intensidad de su horno
  6. Para la compota hidrataremos nuestro jugo de limón con la fécula de maíz
  7. En un sartén o cacerola colocamos nuestras fresas, le agregamos el agua y el azúcar en forma de lluvia lo movemos un poquito y lo dejamos reposar, una vez que comience a hervir agregamos nuestra fécula de maíz hidratada y comenzaremos a mezclar hasta que veamos que comienza a espesar. Cuando ya haya espesado lo dejamos enfriar y notaremos que se espesa un poco más
  8. Cuando nuestro cheesecake este cocido lo dejamos enfriar (sabremos que esta cocido cuando ya no se mueve como gelatina) y el último paso será desmoldar, agregar y decorar con la compota y listo
