  1. Preparar la mise en place
  2. Comenzamos separando claras de yemas y reservamos
  3. Ponemos a derretir el chocolate
  4. En un bowl acremamos la mantequilla, a punto pomada, para después agregar el azúcar en forma de lluvia, por partes no todo de golpe, solo agregar 3/4 partes reservar un poco.
  5. Una vez el azúcar se haya incorporado con la mantequilla, incorporar las yemas de una en una junto con el chocolate derretido.
  6. Alternar yemas con chocolate.
  7. Cuando tengamos la mezcla lista la reservaremos.
    Comenzaremos a realizar un merengue francés.
    Con las claras que reservamos, las batiremos a velocidad alta, cuando haya espuma añadir el azúcar, seguir mezclando hasta que el merengue este firme.
  8. El merengue lo agregaremos a la mezcla de chocolate, de manera envolvente, junto con la harina y el polvo para hornear, podemos ayudarnos de un colador para que no se incorpore de golpe los secos.
  9. Enharinamos el molde e incorporamos la mezcla.
    Horneamos a 180º de 50-60 minutos, depende el tamaño y el tipo de horno.
  10. El bizcocho horneado, dejaremos reposar para desmontar.
    Una vez desmontado, lo partiremos en 3 partes.
  11. Colocar una parte sobre la base giratoria, e hidratarla con el jarabe de café, una vez hidratado añadimos la crema para batir. (Repetir el paso con el segundo pedazo, al tercero solo lo tendremos que hidratar.)
  12. Alisar los bizcochos con el betún, si notamos que la crema o el betún están ablandándose se puede meter al refri un rato.
  13. Para hacer el ganache, derretir el chocolate, y agregar de poco en poco la leche, hasta tener una mezcla no muy líquida, un poco espesa.
  14. Con el pastel alisado ir decorando con el ganache y lo que sea de nuestro agrado.
