  3. Una vez mezclado y que nuestra leche esté a punto de ebullición vamos a atemperar nuestra mezcla de yemas. (Verter un poco de leche para que nuestra mezcla de yemas tenga la misma temperatura).
  4. Una vez que tengan la misma temperatura, vamos a incorporarlo a la leche, y mezclar muy bien en forma de ocho, hasta que tenga una consistencia espesa.
  5. Una vez lista vaciarla a un recipiente y taparla con plástico para evitar que le salga una costra por encima. Y reservar.
  6. Para la masa choux, colocar el agua y la mantequilla en una cacerola a fuego alto y esperar a que se derrita la mantequilla. Y agregar la harina de golpe.
  7. Mezclar muy bien y mover constantemente para evitar que nuestra masa se queme. Una vez que haya tomado un color dorado, cambiar de recipiente y esperar a que enfríe.
  8. Una vez que se haya enfriado nuestra masa, vamos a ir agregando uno a uno los huevos y mezclaremos hasta que se incorporen perfectamente.
  9. Una vez lista nuestra masa, vamos a colocarla en una manga pastelera para hacer nuestros profiteroles sobre una charola con papel encerado. Y hornear a 180 grados por 25 minutos.
  10. Con nuestra masa hojaldre, vamos a cortar un círculo de 23 cm de diámetro y hornear a 200 grados por 20 minutos.
  11. Para el montaje: Colocar nuestra crema pastelera en la base de masa hojaldre, rellenar los profiteroles con la crema pastelera restante y colocarles caramelo encima. E irlos colocando alrededor de nuestra base.
  12. Terminar de decorar con las frambuesas.
