- Primero comenzaremos elaborando la masa choux. Colocamos una cacerola en la estufa, agregamos el agua y la mantequilla en cubos, dejamos que se incorpore hasta llegar al punto de ebullición.


- Agregar la harina de golpe y con ayuda de una pala de madera comenzar a integrar hasta obtener una consistencia homogénea.



- Pasamos nuestra masa a un bowl y la dejamos enfriar durante 20 min aproximadamente. Cuando la masa ya esté en la temperatura adecuada iremos agregando lo huevos uno a uno hasta obtener una consistencia firme pero no líquida. En algunos casos se tiene que agregar o quitarle un pieza de huevo.



- Una vez elaborada la masa, la pasaremos a una manga pastelera con una dulla circular y en una charola con papel estrella haremos pequeños espirales de 5 cm de diámetro.



- Precalentar el horno a 180 °. Hornear durante 20 minutos, sabremos que ya están listos cuando comiencen a formarse pequeñas grietas y tomen un color dorado en el exterior.


- Cuando los profiteroles ya estén fríos haremos un pequeño orificio en la parte de abajo y rellenaremos de crema pastelera.

- Para la crema pastelera: Verter la leche en una cacerola con el 70% del azúcar hasta que alcance el punto de ebullición.


- En un recipiente agregar la fécula de maíz y el otro 30% del azúcar, la cucharada de esencia de vainilla y las 6 yemas de huevos y mezclar todos los ingredientes.



- Agregar 100 ml de la leche caliente a esta mezcla con el objetivo de nivelar la temperatura entre las dos mezclas, para que no suceda un choque de temperaturas que pueda afectar el producto final. Agregarlo a la leche y comenzar a mezclar sin dejar de mover para evitar que se formen grumos.



- Colocar plástico vitaflim para evitar que se formen costras y dejar enfriar.

- Para el caramelo: Agregar todos los ingredientes en un recipiente a fuego bajo y moveremos constantemente hasta conseguir la consistencia y color deseado.



- Para el montaje: sumergir la parte superior de los profiteroles en el caramelo para conseguir una cobertura crugiente.

- Colocar la base de masa hojaldre de 25-30 cm de diámetro, agregar una capa de crema pastelera con fresas fileteadas, colocar los profiteroles rellenos alrededor, rellenar de crema batida y decorar con fresas enteras. Y listo a disfrutar de nuestra tarta.
