- 2 dientes grandes de ajo picados
- 150 ml puré de tomate
- 725 ml agua
- c/n sal
- c/n pimienta
- c/n aceite de oliva

- 1 charola redonda

- Primero colocaremos 3 cucharadas de la harina con la levadura, mezclaremos junto con el agua y dejaremos leudar por 30 minuto en un lugar cálido.
- Dentro de un bowl colocaremos el resto de la harina, con la ½ cdta. de sal y le agregaremos 2 cucharadas de aceite de oliva y lo mezclaremos bien.
- Ya mezclados y pasada la media hora, agregaremos de poco en poco la masa madre que hicimos anteriormente.
- Ya integrada la masa, la sacaremos del bowl y comenzaremos a amasar, si está muy pegajosa la masa podremos agregarle un poco de aceite.
- Amasaremos hasta que obtengamos una masa consistente, blanda y elástica. Después llevaremos a fermentar hasta que la masa doble su tamaño.
- En lo que la masa dobla su tamaño haremos la salsa, cortando nuestros tomates por la mitad y exprimiendo el jugo con las semillas, después los pasaremos por un colador para separar el jugo y las semillas.
- En una cacerola colocaremos una cucharada de aceite, y después agregaremos los tomates y los taparemos hasta que se ablanden. Cuando ya se hayan ablandado agregaremos 300 ml de agua y 150 ml del jugo de tomate. Se seguirá cociendo a flama alta hasta tener 60% de tomate y 40% de jugo.
- Cuando los tomates estén listos los pasaremos a la licuadora para molerlos. Antes de agregarlos a la cacerola caramelizaremos el ajo y la cebolla, cuando ya estén caramelizados agregaremos los tomates para revolverlo de 3 a 4 min.
- Después agregaremos 300 ml de agua y 150 ml de puré de tomate, condimentaremos con albahaca, sal y pimienta; mezclaremos bien y dejaremos que se reduzca a fuego medio por 30 min. (Seguiremos mezclando hasta que esté lista)
- Cuando la masa esté lista la poncharemos, colocaremos la harina sobre nuestra mesa y comenzaremos a estirar nuestra masa con ayuda de nuestro rodillo.
- Cuando ya esté estirada nuestra masa con ayuda del rodillo la colocaremos.sobre nuestra charola (previamente enmantequillada y enharinada o engrasada con aceite de oliva).
Comenzaremos agregando la salsa y el queso. - Después agregaremos los ingredientes que queramos para nuestra pizza, después llevaremos a hornear a 180°C de 30-40 min.
- Cuando la pizza esté lista la sacaremos de horno y rebanaremos para servir y disfrutar.
