- Lo primero que haremos será el poolish, para esto necesitamos mezclar la harina, levadura y agregar de poco en poco el agua
- Revolver hasta que no nos quede ningún grumo y dejar fermentar, (en mi caso como no tenía prisa lo deje toda la noche en refrigeración para que la fermentación fuera más lenta y diera mejor sabor y aroma a nuestra masa, pero si tienen prisa con una hora que se fermente cerca de un lugar cálido es suficiente)
- Lo siguente es hacer un volcán con nuestra harina y agregar el poolish a la harina, mezclamos
- Después agregamos de poco a poco el aceite y la sal y seguimos mezclando
- Amasamos un poco y la dejamos fermentar hasta que doble si tamaño Nota: está es una masa muy húmeda así que no se preocupen por si la sienten húmeda no es necesario agregar tanta harina ya que nuestro pan puede quedar seco y la miga no será suave.
- Una vez que ya haya doblado su tamaño ponchamos la masa y comenzamos a estirar con un rodillo o palote, le agregamos un poco de harina a nuestra superficie donde vayamos a estudiar la masa para que no se nos vaya a pegar
- Después de haberla estirado la cuadramos, les recomiendo que no la estiren mucho, aproximadamente de 1.5 a 2 cm de grosor
- Luego la cortamos por la mitad para sacar dos piezas de nuestra ciabatta
- Pasamos a la charola con papel encerado o papel estrella para que nuestros panes no se peguen
- Les ponemos un poco de aceite de oliva encima, sal, pimienta y nuestras aceitunas (se puede sustituir por calabacitas italianas, o cebolla en pluma)
- Dejamos fermentar un rato, de 15-25 minutos aproximadamente
- Una vez fermentado lo metemos a hornear a 180°c-200°c durante 20-30 minutos (esto dependerá de la intensidad de nuestro horno)
- Sacamos del horno y dejamos enfriar. Es un pan muy suave, con la miga de igual manera suave, se puede comer solo, en emparedados o como queramos c:
- En mi caso yo los hice crotones y los presenté con una crema de chayote. ¡Esto es a tú imaginación!
