- Cuando la masa haya duplicado su tamaño, ponchala y pesa porciones de 60 gr.
- Se extiende un poco la masa y luego junta las extremidades, para luego bolearla.
- Mientras tanto vuelve a darle una segunda fermentación a las bolitas. Coloca manteca vegetal en la superficie, esto para cuando coloques la costra se adhiera a la masa.
